April showers bring more than May flowers! The season of spring also provides deliciously fresh produce and is the best time to fill your plate with all of those in-season veggies. Our favorite springtime suppers are veggie-centered and incorporate light yet satisfying ingredients that are packed with irresistible flavor and nutrients. 

Creamy Crab & Spinach Stuffed Purple Artichokes 

Stuffed artichokes get a light makeover with the addition of creamy spinach, lump crabmeat and a salty breadcrumb topping. This low carb dinner is packed with vitamins and fiber and ready to devour in just 45 minutes. Boil the artichokes in salted water for 30 minutes until tender. Purple or green artichokes work for this dish. Gently open the artichoke leaves and remove the choke, before filling with the decadent spinach mixture. Sprinkle the top with a combination of panko breadcrumbs, parmesan, and olive oil for an extra crunchy and cheesy layer. This springtime supper is the ultimate showstopper and sure to please the hungriest of guests! 

Brussels Sprouts, Shrimp, & Sweet Baby Broccoli Salad 

Shrimp salads and springtime just go hand and hand! With extra daylight and a warm breeze, fire up the grill and gather your family for a delicious dinner on the patio. Season large shrimp with a cajun spice mix, layer onto a skewer, and throw them onto the grill for extra smoky flavor. While the shrimp is grilling, combine Ocean Mist Farms brussels sprouts, broccoli, green onions, and cilantro into one deliciously green and nutrient-dense salad. Toss with a homemade sweet and tangy chili-lime vinaigrette for a refreshing meal that celebrates the wonderful taste of spring. 

Mediterranean Inspired Cauliflower Rice Bowls 

Easily customizable cauliflower rice bowls are delightful weeknight suppers that the whole family will love. With just one bag of Ocean Mist Season and Steam cauliflower rice, this craveworthy meal is ready in under 15 minutes. Begin by filling the bag of cauliflower rice with delicious flavors of the Mediterranean: olive oil, lemon juice, oregano, thyme, and garlic. Steam in the microwave for 3 minutes and pour the tender rice into a serving bowl. Layer with fresh sliced cucumber, tomatoes, olives, and salty feta cheese.
