I was surprised with a very special gift recently. One of the members of the Tottino family, Kevin's mom, delivered a homemade Artichoke Heart Loaf, an original family recipe. It was delicious! A wonderful meatless dish full of flavor and texture, and she was gracious enough to share the recipe with me so that I could share it with you and your family:
The flavor profile is very similar to traditional meatloaf, with similar ingredients and seasonings. The mushrooms add a meaty flavor, and the artichoke hearts add a filling texture that creates a satisfying meal. It can even be made gluten free with the use of oats and your choice of gluten-free flour.
