Have Your Cake and Eat (Your Veggies) Too

Holiday season is in full swing, which basically means full rights to indulge your sweet tooth for the next month. But that doesn't mean you should completely abandon eating your veggies. Over the years, with an abundance of Ocean Mist Farms vegetables always on hand, I have found a way to have the best of both worlds. Here is a round up of my favorite secret-ingredient baked goods that taste delicious and have a bit of nutrition, too!

This cauliflower pumpkin pie cake is sweet, spiced, moist and crumbly- the best parts of a pie and a cake all on one plate. Plus, the addition of cauliflower rice gives it a boost of texture (and fiber) to make it extra satisfying. Best served a la mode or with freshly made whipped cream!

OCEAN-MIST_OLIVE-OIL-CAKEItalian Artichoke & Fennel Olive Oil Cake

The addition of fennel and artichoke flavors in this Italian Artichoke & Fennel Olive Oil Cake come together in the most beautiful way. If you've never had an olive oil cake, it may sound like an odd oil to bake with, but this traditional Italian staple creates a tender, moist crumb that is second to none.

Castroville White Chocolate Cake Pops

Wishing you could head to warmer weather this holiday season? A taste of the tropics are surely the next best thing ;D. These key lime cake pops with toasted coconut boast all the tropical flavors in the convenience of a cake pop. Plus, you'll never guess what is hidden underneath the chocolate shell! (Achem artichokes!)

Growing up on California's central coast, I enjoyed delicious artichokes around the family dinner table and always on Christmas Eve! It is beyond perfection that I now market artichokes for a living and get to share the Ocean Mist Farms story and my love of all things fresh.
