Easy Meals for the End of School Year Madness

When my kids were in school, it seemed like May was always jam-packed with end of the year festivities. Between the parties, award ceremonies, studying for finals, and graduations to attend, the calendar filled up fast. With all that excitement came very little time to think about dinner, but it was still important to me to have our family gather around the table and catch up on everything that was going on.

Over the years, I developed a list of go-to meals that I could whip up during these busy seasons, and always loved when friends would share their favorite quick dinner ideas. So for all you busy moms out there juggling a little extra right now, I'm sharing a few tried and true recipes to help relieve some of your dinnertime stress.

Chicken, Cauliflower & Rice Slow-Cooker Casserole

By now you probably know that I'm a big fan of Instant Pot and slow-cooker meals. In fact, I just used both this weekend! I can throw all the ingredients in, set a timer, and use the cooking time to wrap up my lingering to-do list for the day.
