Keep It Cool and Classy This Summer

Summertime get togethers with family and friends are some of my favorite memories.  Delayed sunsets and evening breezes are the perfect backdrop for catching up and enjoying a great meal and some of our favorite local wine. 

We often choose potluck style dinners on the patio, so I'm usually thumbing through my recipes in search of dishes that, even though they aren't served warm, are a little classier 😉 than traditional picnic fare.  Today I want to share three of my cool, but classy go-to patio potluck dishes.

Artichoke Hummus

Any time I can share my love of artichokes with others around the dinner table, I do!  It's kind of expected actually. This Artichoke Hummus is a noteworthy substitute for the prepared hummus options at the grocery store.  The artichokes can be prepared using your favorite cooking method, and once you have removed the cooked artichoke hearts, the food processor does the rest. Serving this freshly made hummus inside the hollowed out artichokes makes your presentation a little extra special.

Fresh Asian Radish Salad

When I know grilled meats are on the menu, I love this Fresh Asian Radish Salad as a bold substitute for traditional coleslaw.  The radish, kale and carrots provide the perfect crunch, while the ginger, honey, and sesame oil provide the right balance of sweetness and flavor. I will often keep the fresh veggies and dressing in separate containers and toss together right before the meal is served for the freshest, crunchiest bite.

Artichoke Bruschetta

Traditional bruschetta that is served already layered on toast is not only difficult to transport, but you also run the risk of making your baguette bread soggy before it can get eaten. I love that this Artichoke Bruschetta recipe serves more as a dip or spread that dinner guests can prep themselves. Even when I prepare more than I think I need, I always bring home a very empty bruschetta platter at the end of the night.
