Chili Con Queso Artichokes 

This low-carb beauty has definitely earned a spot at the center of your snack table! Kick off your fiesta with Chili Con Queso Artichokes with layers of scratch-made queso over a tender cooked artichoke (I've some friends in Texas who guided this delicious recipe creation😉). Customize this irresistible appetizer with your go-to nacho toppings by adding diced tomatoes and jalapenos, or turn it into a well-rounded meal by topping with ground beef or black beans. Grab a plate and pull up a chair, because this tasty snack won’t last long! 


Artichoke Beef Burritos 

Few things taste better on Cinco de Mayo than warm, beefy burritos, especially when they’re loaded with fresh ingredients. This simple recipe starts with boiling Ocean Mist Farms baby artichokes while browning seasoned ground beef with onions and garlic. Once they’re both fully cooked, add the artichokes, chopped tomatoes, bell peppers, and cilantro into the skillet and stir in tangy El Paso sauce. Spoon the mixture into fluffy flour tortillas and top with Monterey jack cheese or extra hot sauce if desired! Pro tip: If you’re planning a large party, make these burritos ahead of time by rolling them individually in foil and keeping them in the freezer. When it’s time to fiesta, reheat them in the oven until warm and crispy.

With 8 cups of cauliflower rice, diced red bell pepper and green onions, fresh cilantro, and taco seasonings, this simple and nutritious rice is a one-skillet delight and ready to devour in just 20 minutes. Serve your Cauliflower Spanish Rice with chicken kabobs, beef burritos, or as the base of a loaded burrito bowl.
