It’s time for the ultimate appetizer for any occasion! This artichoke guacamole has a 3 way green factor with artichoke hearts, avocado, and salsa verde.
Start with 8 cooked, large Ocean Mist Farms artichokes. Remove the hearts and bottoms from the artichokes and place in a medium-sized bowl. Mash artichoke hearts and bottoms with fork until smooth or place in a food processor. Add avocado, garlic, the juice from 1 lime or lemon, and blend to combine.
Add the ¼ cup of your favorite salsa verde. Blend all the ingredients together and season with salt and pepper to taste. Serve with artichoke leaves, your favorite whole grain snack cracker or tortilla chips!
