Ingredients

4 egg yolks

1/2 cup white wine vinegar

1 clove garlic, peeled

3 oz. kalamata olives, pitted and rough chopped

2 cups olive oil

1 pinch cayenne

Salt, to taste

Directions

  1. Place egg yolks, garlic and vinegar into a blender or food processor. Turn on medium high for 60 seconds.
  2. Add the kalamata olives, olive oil and cayenne pepper.
  3. Season with salt and serve alongside fresh artichokes.
