In a small saucepan over medium-low heat, melt butter and stir in flour allowing to cook for 1-2 minutes to form a slightly nutty smelling paste.
Pour in cream and whisk, turn the heat up slightly and continue to whisk until sauce thickens.
Stir in Gouda cheese and spices and remove from the heat.
Pour chicken stock over cauliflower and seal bag tightly.
Steam in the microwave for 3 minutes on high.
Mindfully remove the bag from the microwave and allow to sit for one minute before straining the liquid from the bag.
Transfer contents to a serving bowl. Pour the creamy sauce over top and fully coat cauliflower then garnish with crispy onions and salt and pepper to taste.
