Fennel/Sweet Anise

Available year-round, fennel is a uniquely flavorful and aromatic herb originally from the Mediterranean region. Fennel’s tender leaves can be used to flavor salads, soups and sauces while the crunchy bulb can be sliced for sautéing, grilling or eaten raw.  Its sweet, licorice-like flavor is a favorite in Italian kitchens.

  • Wrap the fennel bulb in plastic wrap and refrigerate.
  • Fennel will keep for up to 5 – 7 days in the refrigerator.
  • Wash thoroughly and slice off the stalks from the top of the bulb and trim the root end from the bottom. Halve the bulb vertically and slice as you would an onion. Chop each fennel slice into desired size.
  • Once sliced to desire size, fennel can be served raw or incorporated into dishes the same way that onion may be used.  When cooked, fennel has a milder, slightly sweet flavor.  
  • Using fennel tops – Dice up the bright-green fennel leaves as you would any fresh herb and use to flavor soups, pasta dishes and seafood.
