Another Italian favorite! This recipe uses Baby Artichokes. Served over pasta, this Baby Artichoke Sauté is sure to impress guests.

Baby Artichoke Sauté

Serves: 4
Ingredients
8-12 Ocean Mist Baby Artichokes, rinsed and trimmed (See video: How to Prepare Baby Artichokes for cooking)
1/4- to 1/2-cup olive oil
1 medium, chopped Onion
3 garlic cloves
1 cup halved cherry tomatoes
1/2 cup Green Onions
1 tablespoon lemon juice or balsamic vinegar
serve over hot, cooked pasta and any other favorite veggies, such as blanched Asparagus
Directions
Drain rinsed and trimmed baby artichokes well and pat dry. Heat olive oil in large skillet over medium-high heat. Add quartered Baby Artichokes, Onion and garlic and cook and stir until Artichokes begin to brown, about 3-5 minutes.
Stir in tomatoes and Green Onion and cook until heated through, about 2-3 minutes, stirring frequently. Sprinkle with lemon juice or balsamic vinegar. Serve over hot, cooked pasta and sprinkle with cheese, if desired.

I never realized how easy it is to prepare Baby Artichokes! This recipe is a great side to grilled chicken... I used the juices for a little zest on the chicken and loved it! Served it with a sliced lemon and a sprig of fresh rosemary and it was a hit! Thanks for the recipe!
