Asparagus & Chicken Stir-Fry

A healthy and flavorful stir-fry meal

Ingredients:

1 dozen Asparagus spears
1 chicken breast (may substitute with pork or beef)
1 tsp. ginger powder
1 Tbsp. soy sauce
2 tsp. sugar
Salt and pepper, to taste

Directions:

  1. Clean Asparagus and slice diagonally. Slice chicken into small strips. Sprinkle ginger powder into frying pan. Heat Pan
  2.  Add chicken strips to pan and saute until done, stirring constantly. Add Asparagus. Saute until tender-crisp. Add soy sauce, sugar, salt and pepper. Serve immediately with rice.

The Asparagus and Chicken was very delicious and easy to make. I used left over grilled chicken from the night before. My husband is not much of a veggie eater and now I found a recipe with asparagus that he loves. He said he would have the left overs for his lunch the next day. I will be making this next week for the kids and grandkids. It is a must try.
