Kalettes™ Fritatta

Flavorful frittata that's easy to whip up on early mornings when you're in a hurry!

Ingredients:

4 large eggs
1/2 cup water
2 Tbsp. olive oil
1/2 medium onion, chopped
3 oz. Kalettes™, cut in half lengthwise

1 cup grape tomatoes, halved
1-1⁄2 Tbsp. grated Parmesan (optional)

Directions:

  1. In small bowl, add eggs and beat. Add water and mix to combine. Set aside.
  2. In a medium skillet over medium add olive oil and onion. Sauté onion for 5 minutes. Add Kalettes, cover and cook for 4 minutes. Add tomatoes and toss with onion and Kalettes. Cook all ingredients together for 2 minutes.
  3. Add beaten eggs to skillet; cover and cook for 5-7 minutes. If egg on top is not cooked through after 5 minute, use a spatula to lift edge while tipping pan to let egg run underneath. Season with salt and pepper to taste. Finish with grated Parmesan if desired.

Very easy and tasty. Although, the kalettes turned part of the eggs blue, and that was a bit strange.
