Norma Reasons combines Ocean Mist Farms' leeks and artichokes to make this excellent side dish!

Ingredients:

4 cooked Ocean Mist Medium Artichokes Hearts

3 lbs. Leeks

2-3 Tbsp. olive oil

½ cup (2 oz.) shredded fontina cheese

½ cup chicken broth

Salt and pepper, to taste

Directions:

  1. Arrange Artichoke Hearts in buttered 8-inch or similar sized baking dish; sprinkle with salt and pepper. Trim and thoroughly wash Leeks. Cut crosswise into thin slices.
  2. Heat olive oil in skillet over medium heat and add Leeks. Cook, stirring occasionally, until Leeks are limp and tender (about 10 minutes). Divide Leeks among the four Artichoke Hearts. Sprinkle with cheese. Pour chicken broth around Hearts.
  3. Cover pan with foil and bake in preheated 350°F oven for 25 minutes. Remove foil and bake until cheese is melted and just beginning to brown (about 5 minutes). Serve whole or cut in halves or quarters to serve.
