Minted Cauliflower Rice with Peas

A wonderful Spring side dish!

Ingredients:

2 heads of raw Cauliflower (chopped in food processor to resemble grains of rice- see video demo on OMF website under Recipe Video-I Can’t Believe It’s Not Rice)

4 Green Onions, chopped

½ cup chopped, fresh mint leaves

1 cup frozen petite green Peas

1 lemon zest, whole

1 tsp. Beau Monde dry seasoning

1 Tbsp.  garlic salt

1 Tbsp.  salt free garlic seasoning

Black pepper, to taste

Cooking spray

Directions:

Cauliflower Rice
  1. In large saute pan, over medium high heat, spray pan with cooking spray and add all ingredients except Peas. Saute for about 15 minutes or until Cauliflower is tender and fluffy (do not cover pan when cooking).
  2. When Cauliflower is tender, turn off burner and add frozen Peas to Cauliflower mixture. Let sit for 5 minutes and serve.

Leftovers will warm up in microwave beautifully!
